1 zucchini, medium
1 yellow squash, medium
1 red onion, large
5 portabella mushrooms, 5” caps
1/3 cup balsamic vinegar
2/3 cup olive oil
2 tsp. chopped garlic
Salt and pepper to taste
1.       Slice all vegetables other than the mushroom to 1/4 inch. Place in bowl
2.       In separate bowl, whisk together vinegar oil and garlic
3.       Pour marinade over vegetables and allow to rest for 5 minutes
4.       Grill vegetable with salt and pepper on both sides until soft
