1 pound baby spinach
½ cup slivered almonds
½ cup dried cranberries
¼ cup raspberry vinegar
1 Tbs. garlic, minced
1 Tbs. Dijon mustard
½ cup olive oil
Salt
Pepper
4 grilled skinless chicken breasts
 
1.       Combine spinach, almonds and cranberries on a bowl.
2.       In a separate bowl, combine vinegar, garlic and mustard. Whisk together and while whisking add in olive oil until combined. Add salt and pepper to taste.
3.       Toss salad with vinaigrette.
4.       Separate greens onto four plates, slice chicken and dress salads with chicken.
