How to Make Tortilla Soup
Tortilla soup is an easy and delicious dish to make for the winter or any time during the year. It is filling and very flavorful. It is a wonderful combination of Mexican inspired dishes. Although the prep time is lengthy as far as gathering the necessary ingredients, tortilla soup recipes are fairly simple to make.
1 cup Black beans or pinto beans (cooked)
6 Boneless and skinless chicken breast halves
2 cans Chicken broth.
2 can Tomatoes (diced) or 2 cups fresh salsa
1 bunch Cilantro
1/2 cup Green onions
Mexican blend shredded cheese
2 cans Green chili peppers
2 Minced garlic cloves
1 can Tomato Paste
1 bag White corn tortilla chips (broken into bits)
3 oz lime juice
3 Tbs. Canola oil
1 cup Carrots (diced)
1 tsp. Chili powder
1/2 tsp. Cumin
11/2 cups water
2 cups Kernelled Corn
4 Bay leaves
Sour cream (optional)
Salt and Black pepper to Taste
Rinse the cilantro, corn, fresh bay leaves and then pat dry. Mince the onions, garlic, and diced tomatoes. Rinse the chicken using cold water.
Step 1: Take out a large soup pot and add 2 tablespoons of canola oil to the pot and heat for one minute.
Step 2: Add onions and garlic to the oil and allow it to heat for 1 minute.
Step 3: Add tomato paste, cilantro, cumin, chili powder, corn kernels, bay leaves, beans, carrots, chili peppers, chicken broth, chicken breasts, water and any other spices to the pot.
Step 4: Bring the mixture to a boil, and then reduce heat and simmer for 15 minutes.
Step 5: Add 1 tablespoon of canola oil to another skillet on medium. Wait for 1 minute and then add broken tortilla chips. Heat the chips for 2 to 3 minutes until the tortillas are crispy. Remove the tortilla chips from the heat and oil and set aside.
Step 6: Add salsa and lime juice to the simmering soup mixture, and then allow it to cook for 5 additional minutes.
Step 7: Place servings into the soup bowls.
Step 8: Add shredded cheese, more cilantro, if desired, and sour cream to each soup bowl.
Step 9 Add fried tortilla chips to each bowl as desired.
Step 10: Enjoy.
