½ pound dry white beans, rinsed, soaked, boiled until tender
3 Tbs. garlic, chopped
¼ cup lemon juice
¼ cup olive oil
Salt and pepper to taste
1.       In a food processor, start with the beans and the garlic. While processor is running, pour in lemon juice followed by the olive oil. Add in salt and pepper.
2.       Taste the mixture and make adjustments based on personal taste including adjustments to salt pepper or lemon juice content.
