4 salmon fillets
¼ cup olive oil
4 shallots, peeled, minced
4 garlic cloves, minced
½ cup white wine
1 cup short grain rice
3 cups chicken stock
1 bunch asparagus, cut into ½ inch pieces, blanched
1. Season salmon with salt and pepper and sear. Reserve keeping warm.
2. Heat medium saucepan over medium high heat. Add in olive oil and shallots. When translucent, add in garlic salt and pepper. Add in white wine, reduce one minute.
